Quinoa burgers (1 Serving)

Ingredients: 1 cup cooked quinoa 1 potato, boiled and mashed 1/2 cup shredded carrots 1/2 cup finely chopped onions 1/4 cup fresh coriander leaves, chopped 1 tsp ginger-garlic paste 1 tsp cumin powder 1 tsp coriander powder 1 tsp garam masala Salt to taste Bread crumbs or besan (gram flour) for binding Oil for shallow frying

Ingredients:

  • 1 cup cooked quinoa
  • 1 potato, boiled and mashed
  • 1/2 cup shredded carrots
  • 1/2 cup finely chopped onions
  • 1/4 cup fresh coriander leaves, chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • Bread crumbs or besan (gram flour) for binding
  • Oil for shallow frying

Instructions:

Cook the quinoa: In a saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is cooked and liquid is absorbed. Fluff with a fork and let cool slightly.

  1. In a large bowl, mash the black beans with a fork or potato masher, leaving some beans partially mashed for texture.
  2. In a large bowl, combine the cooked quinoa, mashed potato, shredded carrots, chopped onions, and coriander leaves.
  3. Add the ginger-garlic paste, cumin powder, coriander powder, garam masala, and salt. Mix well.
  4. If the mixture seems too dry, add a few tablespoons of water or vegetable stock. If it’s too wet, add some bread crumbs or besan to bind the mixture.
  5. Divide the mixture into equal portions and shape them into patties.
  6. Heat the olive oil in a large skillet over medium heat.
  7. Cook the patties in batches for 3-4 minutes per side, until browned and crispy on the outside.
  8. Serve the quinoa burgers on buns or lettuce wraps with your desired toppings like avocado, tomato, lettuce, cheese, etc.
